recipe // my favorite gingerbread cookies

Happy Friday, y’all! I usually reserve Friday posts for Christmas-gift related roundups, but today I’m switching things up.

Why? I did something just this morning that I’m dying to share with y’all! It’s the perfect weekend activity, and since we’re getting into the holiday spirit, I think you should know about it ASAP.

‘Tis the season of all things baked, and I want to share with you the gingerbread cookie recipe I tried last weekend and have fallen in love with! If you haven’t tried it yet, stop what you’re doing and try Elisabeth & Butter’s Gingerbread Cookie recipe. Soft, chewy, homemade… does it get better than that?!

I’m headed to the ranch with Andrew and his family this weekend, so I thought it would be fun to whip up a batch of these for the occasion! Trust me, I’m not an experienced baker. So if I can make these, you definitely can!

I used Elisabeth’s gingerbread cookie recipe, this icing recipe (I used a hand mixer and it was totally fine) and these cookie cutters for a few ranch-themed goodies. I actually used a wine glass for the circle cookies!

I initially used Elisabeth’s icing recipe, and while it was delicious, I found it a little difficult to decorate with. The Royal Icing recipe I linked is a bit stiffer and easier to manage if you’re wanting to get creative with decorating!

It’s safe to say that I’m not very good at decorating with icing yet, but I have a feeling that I’ll be a pro by the end of the holidays… I know I’m going to be making these nonstop!
