Fun fact… I love to cook. My mother would make the most amazing meals for my family and I growing up, and as I’d watch her I’d vow to one day be as proficient in the kitchen as she!

Spoiler alert, I’m not even close to being there yet. Living alone in an apartment for three years, I’ve come to realize just how difficult it is to cook for one person!

So, friends, I thought it might be a fun change-up from my usual posts to bring you some of my favorite recipes that work quite well even when you’re cooking for one.

First up? The most incredible broccoli you will ever eat! Surprise surprise, I stole this recipe from my mama. It’s quick, easy and if you’re cooking for one person, easily storable and re-heatable! Read on for the details!

 

What You’ll Need

  • 1 head of broccoli (I swear by the pre-cut “Broccoli Florets” bags at Trader Joe’s! Life changing.)
  • 2 teaspoons fresh lemon juice
  • 1 lemon (Optional: I enjoy grating some lemon zest over the dish once it’s completed.)
  • 2 tablespoons of parmesan cheese (Add more to taste if desired.)
  • 1/4 cup extra-virgin olive oil
  • salt
  • pepper

How To Prepare

  • Preheat oven to 400°.
  • Cut broccoli into 1-inch florets. (If using the Trader Joes pre-cut florets, cut the larger ones into halves or thirds. I prefer smaller pieces for extra crisp!)
  • Line a baking sheet with aluminum foil. (This helps with the cleanup.)
  • Spread broccoli florets onto baking sheet, drizzle with the 1/4 cup of olive oil, and toss with salt and pepper.
  • Roast the broccoli in the oven for about 30 minutes, tossing every 5-10 minutes, until brown and tender. (Sometimes, I prefer mine to cook a little longer.)
  • Once roasted to liking, place broccoli in a bowl. Add in the lemon juice, parmesan cheese and additional salt and pepper to taste. Toss.
  • Once plated, grate lemon zest over the top of the broccoli.

This yummy dish makes an amazing side (I love eating it with salmon) or as a stand-alone snack! Like I mentioned above, I always use the Trader Joe’s pre-cut broccoli florets. It saves so much time and money. The serving size from that bag is enough for two. I usually eat half for a side at dinner, then refrigerate and reheat for lunch the next day!

    You should do a feature on cute reusable produce bags and shopping bags! Why wouldn’t you take an opportunity to throw some more color/style into your life?! ;) They’re wayyy cuter than plastic. You can get adorable ones with the tare weight right on the tag so you’re not paying extra for the weight of the bag. One of the many cool things about broccoli is that you don’t have to contribute to the plastic waste problem in order to enjoy it. Broccoli can go straight into the cart or into a fun reusable produce bag. I’d love to see your favorite stylish produce/grocery bags and watch you encourage your readers to be good stewards of our planet as they are all called to be! Beeswax wraps are another item you should feature when you talk cooking! You can get them in all kinds of adorable patterns and then you don’t need cellophane/ziplocs.
